Classic Tofu Salad Sandwich

Here is a really simple way to remake the egg salad sandwich.  I simply subbed the tofu for the eggs and used all the familiar ingredients like I did in the old days.  We have this sandwich several times a year, and it's a great dinner to make when you don't have much time.  I've been making this for sooooo long, and it's still good every time.  Served with greens on the side, it makes for a healthy lunch or dinner.


Classic Tofu Salad Sandwich

Ingredients:

1 12-14 oz. pkg. extra-firm tofu, water-packed, drained
1 cup of vegenaise
2 Tbs. yellow mustard
1 Tbs. dill pickle relish
Salt and pepper to taste
Bread

Directions:

In a medium bowl, mash the tofu with a masher or fork.  Add the rest of the ingredients, except for the bread.  Stir well.  It should be creamy but spreadable, not runny.  Taste and adjust ingredients to your liking.  Chill if you have time, or if not, serve immediately.  It's good either way.  Spread on a slice of bread and top with another piece.  It's that simple!  Feeds five hungry vegans.

  4. Monkey Man, I'll have to give the red peppers a try sometime. :-) As far as bread, there are so many options. I make a lot of my own bread, but most sourdough works. The bread in this picture is rye. Natural food departments in mainstream grocery stores offer vegan bread, as well as stores like Trader Joes and Whole Foods. Good luck!

  5. Wow! A whole cup of Vegenaisse?! Maybe this is the reason I've never successfully made Tofu Salad -- lack of Vegenaisse.

  6. Monkey Man, they're not necessarily separate sections, but they have plenty of vegan bread choices within their regular bread departments.

    SV, vegenaise solves so many menu problems. This is just one of many.

  8. Nellie, well, it's not going to be an exact match. But, the tofu takes on the flavors of the food it's mixed with, and the texture is similar. I've heard of people using black salt added to their tofu to make it taste more like eggs, but I haven't tried it yet. I never liked eggs, so I wasn't after an exact replication. I think you'll like this.

  12. I made something like this today for lunch. Instead of Veganese I used the Cashew Miso Mayo from Appetite for Reduction and I added just the smallest pinch of black salt to give it an 'eggy' flavor.

  15. I love egg salad so I made a similar version of this during the 1 1/2 years that I ate a strictly vegan diet and enjoyed it very much. I added some finely chopped sweet onion, or green onion, and sprinkled it with a dusting of paprika (sometimes the smoked paprika for a variation).

    While it doesn’t taste exactly like eggs, it’s a great substitute so I do think Nellie would like your recipe.

    I can only handle a small amount of tofu (soy and I don’t get along well) but this was one of my favorite ways to have tofu.

    One of my absolute favorite vegan breads is Dave’s Killer Bread. His entire line is vegan and really delicious. Costco carries it and so do many grocery stores in the natural section.

  16. Susan, your variations sound good. I think Nellie will like it too. :-) I've never heard of Dave's Killer Bread, and I shop at Costco. I wonder if it's regional? I'll have to make sure I look for it next time I'm there.

  17. This looks SO good, my husband always talks about back when he first went vegan he had some kind of premade "egg" salad that he LOVED and could never find. He will ADORE this recipe. :)

  20. My mouth is watering! Literally! I've been wondering about making 'egg' mayonnaise with tofu instead of mashed chickpeas (which is what I usually use) and it obviously works. I'll be trying this very soon!
